When I was a little girl my favorite time of day was family meal time. When we all stopped to sit down and gather around the table. My mother always put fourth the effort and so did my grandmother. Food was a very important part of our family routine. Given I am Italian that was also a plus. When I moved here to Texas I implemented a new dinner ritual. To have family themed dinner nights. This one was called lets salsa with our mouth. It was a south of the boarder tex mex kind of deal. Not knowing what Tex Mex is or really making enchiladas I took to some recipe sites and started to merengue all over the kitchen.
I set the mood with my fiestaware plates and placemats. I even put my hot pink fake roses my boys bought me for Mothers Day last year; Ole Ole!!!
I baked these easy peasy enchiladas – my family were great sports and gave it the three bite try before putting the fork down for the count
You can never go wrong with a margarita with salt on the rim. Ohh it sure hit the spot and quenched my soul.
This is the finished product with rice and beans. All the toppings to make it so authentic and tastefully done. I bought some soda to go with the theme. The rice added to it and so did my display. I was going to make Flan and then I thought, NO! This is too much. I used to do dinners like this every night until I had a life when I moved here. I still do nice displays but this kills me. Unless alcohol is involved. We do themed nights for dinner however they are once a month and on a weekend. When its football season it doesn’t happen as frequent. Sunday dinners consist of a mis mash of food in football dishes. Was my Grandmother and Mother crazy with themed dinners? You got to be kidding me. I cant keep up with my family. My family is lucky that Italian isn’t Chef Boyardee in our house.
